Looking for Good Bars in Sydney on a Monday Night

I know it’s a bit of an unusual request, but are there any good bars open on a Monday night in Sydney? I’ll be flying in from the US and landing early Monday morning. If I have the energy, I’d love to check out some dive bars. Not looking for cocktail places—I’m more of a vodka and water kind of person!

P.S. I’ll be heading to Brisbane on Tuesday evening, so I’m also open to bar recommendations for Tuesday night there!
