    Ingredients:

    Base:
    – 250g plain biscuits (like Marie or Nice biscuits)
    – 125g unsalted butter, melted

    Filling:
    – 500g cream cheese, softened
    – 395g sweetened condensed milk
    – 1 cup thickened cream
    – 1 tsp vanilla extract
    – 2 tsp gelatine powder (optional for setting)

    Topping:
    – 2-3 packets of your favorite flavored jelly (like raspberry or orange)
    – 2 cups boiling water (to dissolve the jelly)

    Directions:

    1. Prepare the Base:
    2. Crush the biscuits into fine crumbs (you can use a food processor or a ziplock bag and rolling pin).
    3. Mix the crumbs with the melted butter until well combined.
    4. Press the mixture firmly into the base of a lined slice tray. Chill in the fridge while you prepare the filling.

    5. Make the Filling:

    6. In a large bowl, beat the cream cheese until smooth.
    7. Add the sweetened condensed milk and vanilla, and mix until well combined.
    8. In a separate bowl, whip the thickened cream until soft peaks form, then gently fold it into the cream cheese mixture. If you want a firmer filling, dissolve the gelatine in a little warm water and add it to the mix.
