I’m currently living abroad and would love to whip up a classic “Australian delicacy” for my 4-year-old daughter.

  1. Hi there!

What a lovely idea to make Jelly Slice for your daughter! Here’s a simple recipe that usually gets great results:

    Ingredients:

    Base:
    – 250g plain biscuits (like Marie or Nice biscuits)
    – 125g unsalted butter, melted

    Filling:
    – 500g cream cheese, softened
    – 395g sweetened condensed milk
    – 1 cup thickened cream
    – 1 tsp vanilla extract
    – 2 tsp gelatine powder (optional for setting)

    Topping:
    – 2-3 packets of your favorite flavored jelly (like raspberry or orange)
    – 2 cups boiling water (to dissolve the jelly)

    Directions:

    1. Prepare the Base:
    2. Crush the biscuits into fine crumbs (you can use a food processor or a ziplock bag and rolling pin).
    3. Mix the crumbs with the melted butter until well combined.
    4. Press the mixture firmly into the base of a lined slice tray. Chill in the fridge while you prepare the filling.

    5. Make the Filling:

    6. In a large bowl, beat the cream cheese until smooth.
    7. Add the sweetened condensed milk and vanilla, and mix until well combined.
    8. In a separate bowl, whip the thickened cream until soft peaks form, then gently fold it into the cream cheese mixture. If you want a firmer filling, dissolve the gelatine in a little warm water and add it to the mix.

    9. Layer the Filling:

    10. Pour the cream cheese mixture over the prepared base and smooth the top. Chill in the fridge for about 2 hours or until it starts to set.

    11. Prepare the Topping:

    12. Dissolve the jelly crystals in boiling water, then let cool slightly before pouring over the chilled cream cheese layer.

    13. Set and Serve:

    14. Chill the entire slice for another few hours until fully set. Once ready, cut into squares and enjoy!

Feel free to adjust the flavors according to your daughter’s preferences! Happy cooking, and I hope she loves it! 🌈✨
