Imitation Wood-Fired Pizza

Have you noticed the abundance of so-called “wood-fired” restaurants popping up? While their ovens may resemble traditional wood-fired ones, they only use a small amount of wood to start the heat, then they rely on gas to maintain it. The result? You don’t get that authentic smoky flavor or perfectly cooked crust. It’s misleading—let’s just call them wood-and-gas pizzas!

Using gas to maintain temperature might make the process more efficient, but it definitely changes the flavor profile and authenticity of the pizza. It would be more honest for these restaurants to label their offerings accurately. True woodfired pizza has that unique smoky flavor that comes from cooking directly in a wood-burning oven, and anything less feels like a missed opportunity for pizza lovers.
